Chipotle & Ol’ Bourbon Trail Seasoned Pork Burrito Bowl

Ingredients:

  • 2 lbs Pork Tenderloin-diced
  • 1 can Black Beans
  • 1 small bag Frozen Corn
  • 1 small onion-diced
  • 2 Cups Rice
  • 4 Cups Water
  • 2 Tbsp butter
  • 1 Tbsp Chicken Base
  • 2 Tbsp Chipotle Olive Oil
  • 2 Tbsp Ol’ Bourbon Trail Seasoning
  • 1 Cup diced Tomato
  • 3 tsp Lime Juice
  • Lime zest
  • ¼ tsp Applewood Pepper
  • ¼ tsp Sun Ripened Tomato Sea Salt
  • ½ Cup Sour Cream
  • 3 Tbsp chopped Cilantro
  • Monterey Jack Cheese to garnish

Instructions:

  1. In separate bowl mix together; tomato, lime zest, 1 tsp lime juice, and chopped cilantro. Drizzle with Chipotle Olive Oil, Applewood Pepper and Sun Ripened Tomato Sea Salt.
  2. In another bowl, combine: sour cream, 2 tsp lime juice, lime zest, Applewood Pepper and Sun Ripened Tomato Sea Salt.
  3. Heat skillet to medium. Add 2 Tbsp Chipotle Olive Oilto pan and heat. Next add pork and sear. Season with 1 Tbsp Ol’ Bourbon Trail Seasoning, Applewood Pepper and Sun Ripened Tomato Sea Salt. Remove from pan, put in separate bowl, cover, and set aside.
  4. Add butter and onion to skillet. Cook until tender.
  5. Add in to pan; water, chicken base, 1 Tbsp Ol’ Bourbon Trail Seasoning and cook until rice is tender. Remove from heat and add in Black Beans.
  6. In dry hot skillet, add corn and char. Set aside in bowl or platter.
  7. To assemble individual bowls: put in rice, pork, corn, and tomato mixture. Top with sour cream mixture (crema), cheese, lime zest and cilantro. (These are individual so assemble according to individual tastes).
